My name is Cheryl O'Reilly and I bake 26 varieties of cheesecake! The best cheesecakes are baked in a water bath- resulting in the most delicious creamy texture and beautiful presentation free of surface cracks! However, in order to protect the cheesecake from water leaking into the springform pan, bakers have had to wrap the pan in aluminum foil and hope that that no water leaked in. Then, whether successful or not- that foil is discarded- a waste of money and surely not eco-friendly as foil does not biodegrade for approximately 250 years! I needed to solve this problem, so I created the Easy Bath Cheesecake Wrap! The wrap is a reusable, water-proof, oven-safe, food-grade SILICONE "sleeve" that fits snugly around the springform pan. It prevents water from leaking into the pan, allows the water and batter to heat at the same rate therefore baking uniformly from the edges to the center producing a delicious creamy texture and a lovely smooth surface free of cracks!
